I was asked to do a small 'festive or holiday' food demonstration at the new Kino'ole Farmers Market in Hilo. The demo was this morning and I decided what is more festive and holidayish than an Ambrosia Salad.
In South Carolina, where we lived for many years, Ambrosia is traditionally served during the Christmas Holidays or even as part of the Christmas dinner. Since we have so many beautiful fruits available to us at this time of year, I decided to make it a Tropical Ambrosia.
Starting with a pineapple, long recognized as 'the symbol for hospitality', I hollowed a pineapple shell with a great gadget that cores and slices it at the same time, leaving an intact shell which can be used for other purposes....of course, we saved the top to replant.
I then added the slices of small apple bananas and mixed well with the pineapple pieces and juice so they wouldn't turn color. Building on that base I used an assortment of fruit as follows:

Well Sonia ,I have to say that you look like an interesting person, I love the pictures that you take ,the colors are fabulous, and I only wished to be able to go to visit all the places that you went to, but with 2 young kids it is very hard.... love the fruit bowl that you shared with us, I remember when I went to Costa Rica and got to eat all that amazing fruit... but it is hard to find it here in AZ or in Italy where I am from... , I will keep looking at your blog... and if you want you can come and visit mine, nothing in comparison of yours.... :-) , bye from your Italian friend Dolly.

Pat, I retain many warm memories of yours and Larry's visit during Hawaii Blast this past July. I wish we could turn it into a yearly event!
If you thought the farmer's market was exciting in July, you should experience it now. I'm going back one day JUST to take pictures.....!
Sarah, thank you! I was telling my mom about your visit to Honolulu during Thanksgiving and how I flew over to spend the day with you, Hannah and Simon and how much fun I had. She was pleased I was able to meet you in person, finally after 5 years of 'knowing you' through the Internet!

Beautiful bowl of fruit! Wish we could buy some of those fruits here in Oregon. Seeing you in the picture takes me back to Hawaii Blast last summer. The temperature is down to 32 degrees and I think I'm freezing!
