We made the breadfruit tamales this evening using banana leaves as wrapping and olive oil as the fat. They were completely delicious! (Especially ono with heaping helpings of guacamole!) It was hard to tell that they were not regular corn tamales. Next time we'll probably add some lime juice to the breadfruit. Mahalo for the recipe!

Thank you, Mary... the breadfruit has no distinctive taste, and can be used similar to a potato, but it absorbs other flavors much better than a potato...actually, as we learned during the contest, it is much more versatile than the potato. You would not believe the variety of dishes entered in the contest!

What a beautiful tart! I'm not familiar with breadfruit but anything that is a vehicle for all those wonderful flavors & colors~ especially served on a base of macadamia nut & almonds has to be wonderful!

Thanks so much for sharing these recipes! I've recently fallen in love with breadfruit as a result of Kanu's Eat Local challenge and was disappointed that I couldn't make it to the festival. These recipes sound great and I'm looking forward to seeing more!
