Bok Choy grown in an Aquaponic system
A friend shared a recipe in one of our on-line cooking groups a few days ago for a slaw made with Bok Choy instead of cabbage. Since I had some in my refrigerator I decided to play with the recipe. The recipe as given came from Cooking.com...but as usual, I tweaked it to suit us and the ingredients I had on hand.
The dressing in the original recipe called for sesame oil, but I was out and did not use any oil, but instead added the juice of several tiny calamandine oranges. It was very crunchy and refreshingly delicious!
Crunchy Bok Choy Slaw
For the dressing:
Whisks all the dressing ingredients together and let sit for a bit so sugar can dissolve. Whisk again before adding to the slaw. Mix, cover, refrigerate until ready to serve.

I hope you sand pail selection made it! They estimated August 1st at the post office. I just got an email from my Canadian winner and hers just arrived yesterday, it had to go through customs.
