Niu Mai’a ‘Ulu Flan - Nummy Coconut Banana Breadfruit Flan
.
1 soft 'ulu
2 ripe bananas
5 homegrown eggs
1 cup fresh coconut milk
1/2 can evaporated milk
1/2 can sweetened condensed milk
1 (seeds of) vanilla bean pod
1/2 cup sugar

Combine all ingredients except sugar in blender, add the scraped vanilla seeds and blend well.

Preheat oven to 350F
.
Put sugar with 2 tablespoons of water in a pot and heat over low heat until sugar melts and caramelizes. Pour the caramelized sugar into an oven-safe glass baking dish and pour the blended ingredients on top.

Place glass baking dish into a larger oven pan in which you've added 1/2 of water for bain marie. Bake at 350F for 1 hour. Remove from oven, allow to cool and place in refrigerator overnight.
