2012 Breadfruit Festival Goes Bananas - 'Ulu Banana Salad

Whole 'ulu or breadfruit - a couple of assorted varieties

Breadfruit was to be the main ingredient, but for this year's festival which was themed "Breadfruit Goes Bananas", contestants were encouraged to add bananas to their entries in the "Goes Bananas" Category.

Second Place Winner in the "Goes Bananas" Category was ‘Ulu Goes Banana Salad by Sherry Kapaun of Kailua-Kona

‘Ulu Goes Banana Salad

 

1 (13.5 ounce) can coconut milk

1 cup water

1/2 'ulu, steamed and cubed

4 medium green bananas cooked and sliced 1/4 inch

4 eggs, hard boiled, sliced

10 petite size dill pickles, chopped

3/4 cup mayonnaise

3 Tablespoons yellow mustard

1 1/2 Tablespoons sugar

3 teaspoons pickle juice or vinegar

Salt to taste

6 large lettuce leaves

6 sprigs fresh dill

Wash, peel and cut the 'ulu in half; steam(*) with 1/2 can coconut milk and 1/2 cup water for about 20 to 30 minutes, until tender.  Remove and cool.

Cut only half of the ulu into 1/4 inch chunks and place in a large bowl.  Save the other half for another purpose.

.

Peel 4 green bananas (use apple banana or any other regular dessert or raw eating banana).  Leave whole and place in pan with 1/2 can coconut milk and 1/2 cup water; steam(*) until tender, 8 to 10 minutes; cool and slice and place in the bowl with the diced 'ulu.  Add the diced hard boiled eggs and pickles.

In medium bowl, mix together mayonnaise, mustard, sugar, and pickle juice;  stir into the 'ulu - banana mixture and salt to taste.

Place a large lettuce leaf on each of 6 salad plates and top with the 'Ulu Banana Salad and garnish with a snip of fresh dill sprig.

Yield: 6 servings

.

(*) Although as written, the recipe said to 'steam' the 'ulu and the banana, this is actually poaching as they are cooked in the liquid.
