The judges for the cooking contest at the recently held
'Breadfruit Festival Goes Bananas' used the following criteria for scoring each
dish during their tasting; best use of breadfruit, taste, presentation,
originality and use of healthy ingredients. Scoring from 0 to 5, the highest
possible score for any dish was 25 points per judge.

This year the cooking contest was judged by a panel of local chefs and foodies; chef Edwin Goto owner of the 'slow food' restaurant Village Burger; award winning private chef and 'Conscious Hawaiian Cuisine' inventor Olelo pa'a Ogawa; freelance food writer, cookbook author and former Honolulu Advertiser food edito Joan Namkoong; Chef Devin Lowder of Makali'i catering; food writer and cookbook author Sonia R. Martinez and Peneku Kihoi a.k.a. "Auntie Aloha."

The cooking contest was part of the overall 2nd annual
celebration of breadfruit which took place on Saturday, September 29th at the
Amy B. H. Greenwell Garden in Captain Cook on the Island of Hawai'i (the Big
Island)
.
A variety of very imaginative dishes using breadfruit
were entered. This one was just good, tasty, down-home comfort
food.

‘Ulu with Mountain Pig Stew by Jim Cain of Honoka’a

'Ulu with Mountain Pig
Stew

2 firm 'ulu
Smoked Sausage
Water to cover
Pinch of pa'akai
.
For the sauce:
3 Tablespoons mayonnaise
1/4 cup shoyu
1/8 cup sambal
.
Go to the mountain and catch a pig. Make smoked
sausage. Skin and cube 'ulu and chop sausage into bite size pieces. Cover with
water and add a pinch of pa'akai. boil until 'ulu is soft. Add sauce and grind

Yield: 8 servings

Glossary:
'ulu - Hawaiian word for breadfruit
pa'akai - to solidify the
sea; Hawaiian name for salt pond harvested sea salt
shoyu - soy sauce
sambal - chile pepper based sauce used extensively as a
condiment in Malaysia, Indonesia, Singapore, Shri Lanka, the Philippines,
Suriname and the Netherlands due to the Javanese influence in those countries.
It can be found commercially but its most often homemade.
