Sonia's Flourless Peanut Butter
Cookies
1 cup smooth or chunky peanut butter
1 cup brown sugar, packed
1 egg
1 teaspoon vanilla extract (optional)
Preheat oven to 350 F
Mix all ingredients and roll
dough into balls (*) and place on ungreased cookie sheet 1 or 2 inches apart.
Use fork dipped in sugar to make cross hatch marks. Bake 10 minutes or until
bottom just turns golden brown. Cookies will look slightly underdone and will be
very fragile. They will get crispier/crunchier as they
cool.
