Starting our Christmas Season with special little dinners as the mood hits me...
Last night's dinner featured very easy, but quite delicious crab cakes...a combination of several recipes found on the Internet.
There are no quantities, I just played with the amounts and they turned out just right.
My son picked up a package of crab meat at the fish counter in one of our local supermarkets. He was told they were lump backfin pieces and leg meat picking. There were still some pieces that were long and thin, like the meat was extracted in one piece from a leg. I chopped them into smaller pieces.
Easy Crab Cakes
Approximate 1/2 pound of crab meat
1 egg
About 1 Tablespoon mayonnaise
A dash Worcestershire Sauce
lemon juice - 1/2 of a lemon and a bit more
Fresh chopped parsley
A dash of sriracha sauce
Crumbled Ritz crackers
Beat the egg into the mayonnise and add everything except the crumbled crackers, mixing well. Add to the crab meat and then add the crumbled crackers, just enough to bind it all together.
Amounts were enough to form patties without them either being too dense or falling apart. Don't handle them more than you have to.
Place in refrigerator for a couple of hours to set so they won't come apart when cooking.
Either fry in a bit of oil - I used avocado oil - or bake in the toaster oven
Serve with a dab of sriracha mayo sauce over fresh baby spinach.
Yield: 4 patties
